“This crisp and dry table beer has been aged in barrels since our first brew day in December 2021. A complex mixed fermentation character brings notes of hay and funk, with hints of pineapple and coconut leading into a tannic finish from the wine casks. Fresh lemon and lime zest round out the beer. This beer will continue to develop over time as the fruit flavour fades and is transformed by the yeast into something wilder.”
